BRUICHLADDICH CONTINUES THE BLACK ART SERIES

THE SAGA OF NON-PEATED AGED EXPRESSIONS 


Labels submitted to the TTB have revealed the next release in Bruichladdich’s Black Art series, Edition 09.1, the ninth release in the limited edition Black Art series and the fifth by Head Distiller Adam Hannett.

Black Art Edition 09.1 will be a vatting of single malts matured for a minimum of 29 years in various undisclosed casks, making it the oldest expression in the series to date. Black Art 09.1 will be bottled non-chill filtered and colour-free at 44.1% ABV.

Bruichladdich Black Art Edition 09.1 is a 1992 vintage of unpeated single malt Scotch whiskies matured entirely on Islay for all 29 years. As with all Black Art releases, the type of casks used in the vatting have not been revealed and the recipe is known only to Adam Hannett.

Limited to 12,000 individually numbered bottles, Bruichladdich Black Art Edition 09.1 will began shipping to stores November 1, 2021. The enigmatic arts of the distiller are shrouded by scattered facts. There are dark secrets within and marking the passage of time alone bestows insufficient heft. Through these burdened hands great oak and steadfast principles pass. High art, complex and mysterious is revealed only to those who see stars.

With so few of those old casks left in the warehouses of the Bruichladdich Distillery on Islay, The Black Art 9.1 was composed from 29 year old single malt. It’s a 1992 vintage, so spirit was distilled in the era before the distillery closed in 1994. Casks from those years only make up 1% of the stock in the Bruichladdich warehouses, informs the current press release. As always with the Black Art, it remains the Head Distiller's secret which type of casks he chose for the edition.

Inspiration was taken from the groundwork done in creating the first editions of this series, where there was a relentless pursuit of layers of flavour. 10 years later, they are again managing those stocks and recasking and blending more than done previously. But it’s that time in the casks that they’re working with now, because when the Black Art series started it was around 20 years old, now it’s almost 30 years old. So the evolution of that whisky by using those same stocks is really different.

PRODUCER’S TASTING NOTES FOR BRUICHLADDICH BLACK ART 9.1

COLOUR: rust red

NOSE: Breathtaking. Tropical fruits, coconut, tobacco, spicy oak and flamed pine branches. With a little time, the whisky opens up seductive notes of mango, melon, sweet honey, orange zest, grilled pineapple and ripe strawberries, fresh from the field. The subsequent scent combination of coconut, ginger, buttery shortbread, vanilla pudding and a hint of tobacco promises a delightful drinking experience.

TASTE: The viscous texture of this dram and its depth are out of this world! Wood, tobacco, brown sugar as well as chocolate and coconut form the perfect basis for extremely intense fruit flavours. With a little water, this unbelievable complexity comes into its own even more.

FINISH: Incredibly long-lasting with seemingly endless notes that are reminiscent of apricot, mango, baked banana, sweet toasted oak, honey and vanilla.

CHARACTER: The Black Art 09.1 seems to be inspired by the first editions, when the magical search for the maximum complexity of flavours began. This fruity whisky undoubtedly matured in the best casks of the distillery, where it was patiently observed over many years, tasted again and again and finally bottled at the zenith of its development.

FUN FACTS ABOUT IRISH WHISKEY

Irish whiskey was one of the earliest distilled drinks in Europe, from around the 12th century.

 Irish monks brought the technique of distilling perfumes back to Ireland from their travels to southern Europe around 1000 AD. They met up with the Moors, a group of black men who had brought the art of creating alkool from Arabia by 900 AD. The Irish then modified this technique to obtain a drinkable spirit. 

Although termed "whiskey", the spirit produced during this period would have differed from what is currently recognised as whiskey, as it would not have been aged, and was often flavoured with aromatic herbs such as mint, thyme, or anise.

In 1779, there were 1,228 registered distilleries in Ireland – though this was hacked after an Act of Parliament was introduced to calculate the taxes payable on whiskey production on the basis of apparatus capacity. By 1790, this number had fallen to 246, and by 1821, there were just 32 licensed distilleries in operation.

Once the most popular spirit in the world, a long period of decline greatly damaged the industry. Although Ireland boasted of 28 renowned distilleries in the 1890s, by 1966 this number had fallen to just two, and by 1972 the remaining distilleries, Bushmills Distillery and Old Midleton Distillery (replaced by New Midleton Distillery), were owned by just one company, Irish Distillers.

The monopoly situation was ended by the launch of the first new distillery in decades, Cooley Distillery, in 1987.

Since the 1990s, Irish whiskey has seen a resurgence in popularity and has been the fastest-growing spirit in the world every year since then. With exports growing by over 15% per annum, existing distilleries have been expanded and a number of new distilleries constructed. As of December 2019, Ireland had 32 distilleries in operation, with more either planned or under development.

According to Irish food board Bord Bia, global exports of Irish whiskey are on track to double by 2020.

This is not the first time the category has experienced a boom – it was even the most popular spirit in Scotland for a period in the 1800s.

Official records till 1600 AD are gobbledygook, as many Irish records were oral rather than written.

What started out as a religious day in homage to the patron saint of Ireland, St Patrick’s, has become an international festival celebrating Irish tradition the world over – and a fundamental part of the culture is, of course, Irish whiskey.

Prior to the growth of the Whiskey industry, the common man’s drink in Ireland was Rum!

Whiskey in Ireland does not necessarily have to be spelled with an ‘e’. After a series of spelling changes both ways, Irish distillers adopted the spelling as a point of distinction from the then low-quality blended Scotch whisky. Both spellings are still allowed under the current legislation. Plenty of brands in the past have forgone the ‘e’, and until the 1960s, both spellings were commonplace.

In 1823 Dublin was home to the five largest licensed distilleries in Ireland. At their peak, the distilleries in Dublin were the largest in the world, with a combined output of almost 10 million gallons per year.

A Scot, John Haig's cousin, Robert Stein invented in 1828, the first column still to be put to use commercially, despite certain flaws. Haig used it in his Cameron Bridge distillery.

An Irishman, Aeneas Coffey, created the first truly continuous still. He found virtually no buyers in his country, Ireland. It was an instant hit in Armagnac, France and found favour with Scottish distillers who distilled their grain whisky using his still.

Distillers in Ireland refused to accept the spirit manufactured using the Coffey still. When the Spirits Act was passed 1860/63, almost all Scottish distillers started to blend their double-distilled pot spirit with Malt whiskies to create a remarkably smooth, much lighter and flavourful whisky that sold readily across the world, competing with the triple-distilled Irish pot whisky and even beating it at times.

The Irish whiskey industry lodged a complaint that any liquor mixed with neutral grain spirit could not be called whiskey. The argument was turned down. The Irish then changed tack. They then wanted that their spirit be called the option remaining after the Scotsmen decided which spelling they were going to use and opted to use whisky in the interim.

A formal Board decided in 1909 that thenceforth, all whiskey from Scotland would be called Scotch Whisky. The Irish then reverted to whiskey, to indicate that such a whiskey was triple distilled superior Irish whiskey.

Sadly, the Irish were heading for a drastic downfall, for numerous reasons:the Irish War of Independence, the subsequent civil war, and trade war with Britain (which cut off whiskey exports to Britain and all Commonwealth countries, then Irish whiskey's biggest market); WWI; prohibition in the United States (1920-1933), which severely curtailed exports to Irish whiskey's second-biggest market; widespread counterfeiting of Irish whiskeys in America and Britain; protectionist policies introduced by the Irish Free State government, which capped whiskey exports significantly in the hope of taxing domestic consumption and finally, over-expansion and mismanagement at several Irish distilleries. Together, these factors greatly hampered exports and forced many distilleries into economic difficulties and out of business, and by the early 20th century Scotland had surpassed Ireland to become the world's largest whiskey producer.

The first Irish coffee was invented and named by Joe Sheridan, a head chef in Foynes, County Limerick. A group of American passengers disembarked from a Pan Am flying boat on a miserable winter evening in the 1940s, so Sheridan added whiskey to their coffee. When they asked if they were being served Brazilian coffee, Sheridan replied “no, Irish coffee”.

Travel writer Stanton Delaplane took Irish coffee to the US after drinking it at Shannon Airport. He worked with bar owners at the Buena Vista Cafe in San Francisco to find the method of floating the cream on top of the coffee, and (so the story goes) one night sampled the drink until he almost passed out.

Jameson’s Midleton Distillery first opened with a whopping 31,618-gallon pot still (143,862 litres), which remains in situ within the historic distillery, and can be viewed as part of the tour at the Jameson Experience Midleton. The new stills at Midleton are currently the largest operational pot stills in the world.

The number of pot stills has been increased from four to seven, each with a capacity of ~80,000 litres.

Irish Distillers was formed in 1966, when a merger took place between John Power & Son, John Jameson & Son and Cork Distilleries Company. In 1988 Irish Distillers became a subsidiary of Pernod Ricard.

In June 1875, rivers of burning whiskey flowed through the streets of Dublin like lava after a bonded whiskey warehouse in the Liberties caught fire. The Great Dublin Whiskey Fire took the lives of 13 people, and 1,900 barrels of whiskey, were lost to the blaze.

This was the most disastrous blaze in Ireland (and Scotland) ever.

One of the most haunted Irish whiskey distilleries is Kilbeggan. The site was paid a visit by Derek Acorah, from Living TV’s Most Haunted, who proffered a wealth of interesting tales from the distillery’s rich history. He claimed to have connected with Matthew McManus, the man who founded the Kilbeggan Distillery in 1757; his son John, who was executed in 1798; and Flo Eccles née Locke, the last in a 120 year line of Locke’s to manage Kilbeggan before it closed.

During the show, Acorah recited several little-known facts he claimed the ghosts were telling him, much to the surprise of distillery manager Brian Quinn.

The founder of Jameson Irish Whiskey, John Jameson, was actually a Scottish sheriff clerk. He was born in Alloa in the Central Lowlands of Scotland back in 1740. He married Margaret Haig, a sister of the Haig brothers, in 1768, and the couple moved to Dublin where he established the Bow Street Distillery. Together, they raised a large family, four of whom followed their father into distilling in Ireland. In 1804 John Jameson II took over the reins at Bow Street, establishing the firm of John Jameson & Son.

The world’s most expensive bottle of Irish whiskey is a 25 Year Old Pure Pot Still Whiskey which dates back to the late 1800s. It is one of the last to be produced at Nun’s Island Distillery in Galway, which closed for good in 1913. Arkwrights Whisky and Wines store in Wiltshire is offering the bottle, on behalf of its owner, for £100,000.

A merger of John Power & Son, John Jameson & Son and the Cork Distillery Company; Irish Distillers was formed in 1966 in an attempt to reverse the decline in Irish whiskey sales. In 1972, Bushmills – the only other whiskey distillery in operation in Ireland – joined the group, and Irish Distillers became the sole producer of whiskey in Ireland for more than a decade. Now a subsidiary of French drinks group Pernod Ricard, Irish Distillers remains the largest distiller of Irish whiskey to this day.

When the triple whammy of fungal infections including the Phylloxera plague devastated European vineyards 1860-90, Irish whiskey replaced brandy to become the world’s favourite spirit.

Irish whiskey is experiencing a massive renaissance. It’s currently the fastest growing spirit category in the world. Last year there were four whiskey distilleries operating in Ireland. Today there are over 15 more distilleries either already operational, or in development.

Meanwhile in the US, Dead Rabbit NYC, run by Irish lads Jack McGarry and Sean Muldoon, is garnering worldwide renowned for its expertise in Irish whiskey cocktails. ‘Pot-still whiskey’ is a uniquely Irish style of whiskey, with exceptional fruit and spice characteristics, and a luxurious creamy texture. It is made by combining both malted and unmalted barley in the mashbill, prior to fermentation, and then distilling in traditional copper pot stills.

Most people think of Irish whiskey as blended, triple distilled and unpeated. While this is true of many Irish whiskeys, there are wonderful examples of fine Single Malt Irish (Bushmills 10), Single Grain Whiskeys (Teeling Single Grain), Single Pot Still (Redbreast & Greenspot), Peated Single Malt (Connemara), and double distilled Irish whiskey (e.g. KiIlbeggan).

If you want to brush up on your whiskey knowledge or just have a good day out sampling the stuff, there is a whiskey museum in Dublin on Grafton Street or the Jameson Distillery experience in Cork.

Whiskey was founded by Irish Monks, who had the time, education, and safe locations to perfect distillation.

Irish whiskey doesn’t toast it’s barley, making it smoother.

Irish whiskey uses a method called pot still where heat is applied directly to the pot. It is usually distilled three times.

According to the Irish Whiskey Act of 1980, as amended from time to time, wef 29 January 2016, production, labelling and marketing of Irish whiskey must be verified by the Irish revenue authorities as conforming with the Department of Agriculture's 2014 technical file for Irish whiskey. Irish whiskey must be distilled, aged and matured in the Republic of Ireland or Northern Ireland.

The oldest known written record of ‘whiskey’ comes from Ireland in 1405 in the Annals of Clonmacnoise, where it was written that the head of a clan died after "taking a surfeit of aqua vitae" at Christmas, as against its first known mention in Scotland in 1494, the bolls of aqua vitae story.

By 1556 ‘whiskey’ was widespread, as an Act passed by the English Parliament declared whiskey to be "a drink nothing profitable to be drunken daily and used is now universally through the realm of Ireland". This Act also made it technically illegal for anyone other than "the peers, gentlemen and freemen of larger towns" to distil spirits without a licence from the Lord Deputy. However, as Crown control did not extend far beyond the Pale, a fortified area around Dublin, this had little effect.

The Pale (An Pháil in Irish) or the English Pale (An Pháil Shasanach or An Ghalltacht) was the part of Ireland directly under the control of the English government in the Late Middle Ages. It had been reduced by the late 15th century to an area along the east coast stretching from Dalkey, south of Dublin, to the garrison town of Dundalk. The inland boundary went to Naas and Leixlip around the Earldom of Kildare, towards Trim and north towards Kells. In this district, many townlands have English or French names, the latter associated with Norman influence in England.

The Pale became the base of English rule in Ireland. The Norman invasion of Ireland, beginning in 1169, brought much of Ireland briefly under the theoretical control of the Plantagenet Kings of England.

From the 13th century onwards the Hiberno-Norman occupation in the rest of Ireland at first faltered, then waned. Across most of Ireland, the Normans increasingly assimilated into Irish culture after 1300. They made alliances with neighbouring autonomous Gaelic lords.

In the long periods when there was no large royal army in Ireland, the Norman lords, like their Gaelic neighbours in the provinces, acted as effectively independent rulers in their own areas.

The Lordship controlled by the English king shrank accordingly.

The Pale is derived from the Latin word palus, a stake, or, synecdochically, a fence.

The Pale generally consisted of fertile lowlands which were easier for the garrison to defend from ambush than hilly or wooded ground. For reasons of trade and administration, a version of English became the official language.

The designation you see on Cognac labels—VSOP (Very Superior Old Pale) is a guarantee of how long a Cognac has been aged. VSOP indicates that the Cognac has been aged at least four years. The word Pale is not connected with Ireland or Irish whiskey.

Irish whiskey has a smoother finish as opposed to the smoky, earthy overtones common to Scotch whisky due in part to peating. Peat is rarely used in the malting process outside of Scotland.

There are notable exceptions to these rules in both countries. Examples include Connemara peated Irish malt (double distilled) whiskey from the Cooley Distillery in Riverstown, Cooley, County Louth; Pearse Whiskey from Pearse Lyons Distillery, Dublin; Dunville's peated from Echlinville Distillery, Kircubbin, County Down; and the as yet unreleased whiskey from Waterford Distillery.

In 1608, King James I granted a licence to Sir Thomas Phillips, a landowner in Bushmills, County Antrim. It is through this licence that the Old Bushmills Distillery lays claim to being the oldest surviving grant of licence to distill in the world. However, the current Bushmills distillery and company was not registered to trade until 1784.

The Kilbeggan Distillery (formerly Locke's Distillery), founded by the McManus family in Kilbeggan, County Westmeath, had been licensed and distilling since 1757 (not counting the period between 1954 and 2007) to lay claim to the title of the oldest licensed distillery in Ireland.

Kilbeggan also has what is believed to be the oldest operational copper pot still in the world, over 250 years old.

In 1661, the Crown introduced a tax on whiskey production in Britain and Ireland. Therefore, in theory, all whiskey distillers in Ireland were to register and pay taxes.

Although Crown control now extended far beyond the Pale, there is limited official record of whiskey distillation during this period.

One reason for this is that, until 1761, registration was done on a voluntary basis. Therefore, as registration entailed paying a tax, it was much avoided for obvious reasons.

Another reason is that those tasked with enforcing the law were frequently local landlords, and, if their tenants were the illicit distillers, it was not in their best interests to enforce the law.

It is known, however, that more distillation occurred than is officially recorded, as when registration later became compulsory, several registrations detail the use of existing facilities.

For many years following its introduction, whiskey produced by registered distillers was known as "parliament whiskey", while that produced by illicit producers was, and still is referred to as Poitín, a Gaelic term meaning "small pot" (often anglicised as poteen) in reference to the small pot stills used by the illicit distillers.

However, although traditionally the product of illicit production, many legal varieties of Poitín have come to market in recent years.

Irish whiskey must be made from a mash of malted cereals with or without whole grains of other cereals and which has been:

  •  saccharified by the diastase of malt contained therein, with or without other natural enzymes;
  •  fermented by the action of yeast;
  • distilled at an alcoholic strength of less than 94.8% alcohol by volume in such a way that the  distillate has an aroma and taste derived from the materials used and only plain water and  caramel colour is added to it;
  • subject to the maturation of the final distillate for at least three years in wooden casks, such as  oak, not exceeding 700 litres (185 US gal; 154 imp gal) capacity
  •  retain the colour, aroma and taste derived from the production process referred to above
  • have a minimum alcoholic by volume content of 40%

Individual technical specifications for the three varieties of Irish whiskey, "single pot still", "single malt", "single grain", plus "blended" whiskey (a mix of two or more of these varieties) are also outlined in the technical file. The use of the term "single" in the aforementioned varieties being permissible only if the whiskey is totally distilled on the site of a single distillery.

A Blend means the Irish whiskey comes from two or more distillates, i.e. separate batches of whiskey.  In Irish whiskey talk, single malt, etc. isn’t defined as it is with Scotch whiskey, nor does a blend indicate presence of grain whisky.

Jameson, the largest selling Irish whiskey, and the pride of Ireland was actually created by John Jameson, a Scottish businessman and distillery manager. Written records of Irish whiskey in the Annals of Clonmacnoise dating back to 1405, stating “A.D. 1405. Richard Magrannell Chieftain of Moyntyreolas died at Christmas by taking a surfeit of aqua vitae. Mine author sayeth that it was not aqua vitae to him but aqua mortis.”

Along with Black Bush, the quintessential Northern Irish blend, Bushmills also has a range of excellent single malts. .”

And it doesn’t stop there – if you find an old, anonymous Irish single malt, there’s only one place it could have come from: Midleton. .”

Midleton is Ireland’s biggest distillery and is best known as the maker of Jameson. Irish Distillers, the company that owns Midleton, rose out of the ashes of the whiskey industry in the 1960s. The Cork Distilleries Company, John Jameson & Son and John Power & Son merged and focused on developing one distillery that could meet all of their whiskey needs – Midleton. .”

Along with Jameson, Midleton also makes Powers and Paddy (the big-name whiskies of John Power & Sons and Cork Distillers respectively), and both Redbreast and the ‘Spot’ whiskeys: Green Spot, Yellow Spot and Red Spot. Until recently, Midleton was the only distillery in Ireland, if not the world, making pot still whiskey, and it’s thanks to them that the style didn’t entirely disappear during the 20th century. .”

Cooley, the distiller that heralded the Irish whiskey renaissance. Founded in 1987 by John Teeling as Ireland’s third distillery, Cooley was previously a plant making alcohol from potatoes. Teeling added whiskey column stills, following them with pot stills a few years later to create a distillery that could make all the whiskey styles he needed to make a range of Irish whiskeys: Kilbeggan grain (formerly known as Greenore), Kilbeggan blended whiskey and Tyrconnell single malt. The distillery also makes Connemara single malt – a rare peated Irish whiskey. .”

After Cooley’s emergence as a large player and the subsequent rise in popularity of Irish whiskey around the world, it was only a matter of time before smaller producers started to appear. Dingle was the first of that wave. .”

Dingle’s first spirit emerged from its stills in November 2012, and the last 6 years have seen a number of small batch releases of both single malt and pot still whiskey – the first pot still whiskey to be sold in Ireland for years that wasn’t made by Irish Distillers. .”

The distillery’s releases are small – a few hundred bottles drawn from a handful of casks – and they sell out quickly, but they are worth seeking out to see how this pioneering distillery is continuing to develop and refine its style. .”

Of all the distillers in this list, Dublin Liberties is the newest – the distillery opened last week. Based in the heart of Dublin, the distillery doesn’t have any whiskey of its own yet – Irish spirit has to be aged for at least three years before it can be called whiskey – but the company has launched a range of blended whiskies, also called Dublin Liberties, selected by master distiller Darryl McNally, formerly a distiller at Bushmills. .”

Pearse Lyons, who passed away in 2018, was an Irish businessman, brewer and biochemist who worked his way through the brewing and distilling industry in the 1970s. In 1980 he founded Alltech, a biotech company specialising in animal feed. He couldn’t stay away from the drinks world, and in 1999 opened the Lexington Brewing company, with Town Branch Bourbon following in 2011.

St. Patrick’s Day is celebrated on March 17. It honours the death of St. Patrick, the patron saint of Ireland.

This religious feast day has transformed over the centuries and evolved into a global celebration of the Irish culture. But many just use the day as an excuse to party hard-- decked out in green, of course.

The exact origin of the first Irish whiskey ever produced is unknown but is said to have originated in Ireland during the Middle Ages.

The oldest known written record of whiskey is from the Irish Annals of Clonmacnoise of 1405, which reveals that Risdard MaGranell, the head of Clan Moyntir-eolas died after "taking a surfeit of aqua vitae at Christmas, which for him was aqua mortis."

The first whiskey distillery licensed in the British Isles was Bushmills, in Northern Ireland in 1608.

The estimated number of illegal distillers in Ireland before 1823 was 8,000, essentially due to their relatively difficult-to-hide-in landscape.

The alcohol of choice in Ireland up to 1870 was imported Rum.

In 1779, London saw that the Irish were doing well but not paying taxes as mathematically judged. They levied a presumptive tax in 1780 on arbitrarily assessed distillery output based on their apparatus worked in 2x8-hour shifts across 200 days. By 1781, the 1,228 registered in Ireland distilleries reduced to 246 and by 1821, just 32.

Jameson is the best-selling Irish whiskey in the world. It is the only Irish whiskey in the top 100 most popular liquors in the world, according to data from 2014. Jameson whiskey came in at number 41.

Jameson sells more Irish Whiskey than all other Irish producers.

In 1828, a Scotsman, Robert Stein, John Haig’s cousin, invented a column still for a competition launched by Napoleon to build a gadget that would speed up distillation for brandy and Armagnac. It worked continuously, but only for 24 hours. Downtime for repair and a change of filters took up the next 24 hrs.

Haig installed one in his Cameron Bridge distillery to produce grain whisky.

Two years later, an Irishman Aeneas Coffey devised and patented a column still which worked non-stop, much to the delight of the French.

The spirit produced in Ireland was scoffed at by all Irish distillers—who used triple distilled pot still whisky—as undrinkable, a product of “ingredients of the most deleterious character”.

Scottish grain whiskey distillers and Gin makers imported this Irish still and used it copiously. This already successful Irish apparatus was to become a mega-success in Scotland when blending of malt and grain whiskey was allowed 1860-63.

Irish distillers were using triple distilled pot still whiskey from very finely cut hearts and higher ABVs (55-65%) to rule the global market till ~1900 AD. The slight nip on the nose and palate due to higher ABVs made all the difference.

Irish whiskey outsold Scotch 4:1!

Bushmills was around at the same time Shakespeare was — and that puts things in perspective. Bushmills' name is a blend of the local water source, the River Bush, and the mills that grind their grain. Although fire destroyed a lot of the original distillery in 1885, they're still in the same place.

Legal Irish whiskey was called “Parliament,” whereas illegal Irish moonshine was called poitín.

The poitín men would set up stills in remote areas of the country and make their own version of whiskey, which was, of course, a major target for the authorities.

The revenue department even had an armed division of men who were tasked with finding the stills, which some poitín distillers took full advantage of. When their equipment would wear out or break, they'd report the location to the authorities. Then, they'd collect the reward money for turning in an illegal still and buy new equipment with the cash.

Poitín was outright illegal from 1661 all the way up until 1997. Some Irish whiskey distilleries still make it — in a more legal capacity than the good ol' days.

The first shipment of Jameson hit American shores in 1869, but during World War I, merchant ships crossing the Atlantic were prime targets.

The old part of Dublin is called The Liberties as it's the home of Guinness' St. James's Gate brewery. The brewery was built in 1759, and the timing is no coincidence. Throughout the 18th and 19th centuries, The Liberties was the beating heart of the city's brewing and distilling operations. In addition to Guinness, many businesses, like Jameson and Powers, called The Liberties home.

In fact, the entire area was filled with malthouses, mills, and so many other distilleries it was nicknamed the Golden Triangle.

The Liberties went from having 35 working distilleries (and as many breweries) to none, as the industry struggled. Even the big three — Jameson, Powers, and Roe — packed up and moved away, leaving Dublin with no whiskey-making facilities.

In 2015, Jack and Stephen Teeling opened their new distillery, Teeling, just a stone's throw from where their family's original distillery of the same name, which was founded in 1782, once stood.

The Teeling Whiskey Distillery today is the first new distillery in Dublin for over 125 years.

Jameson, the largest selling Irish whiskey, and the pride of Ireland was actually created by John Jameson, a Scottish businessman and distillery manager.

Matthew McConaughey, Bob Dylan, Drake and Conor McGregor are all celebrities that have their very own whiskey brands. McConaughey owns Longbranch Bourbon; Dylan owns Heaven’s Door Bourbon; Drake owns the Virginia Black Canadian whisky brand and Conor McGregor owns the Proper Twelve blended Irish whiskey brand.

The Old Bushmills Distillery is best known for its signature style of smooth, malt-rich spirits. It is situated on the northern Irish coast, and is recognized as one of the country’s oldest working distilleries.

Dunphy's is an Irish blend made by Midleton, originally for the US market, but now available mainly on this side of the pond. It was first produced back in the 1950s, with mixing and Irish coffee very much in mind.

By the 1960s, following decades of crisis, the market for Irish whiskey was decimated, with only two distilleries, John Power & Son, and John Jameson & Son, operating in Dublin, alongside Midleton distillery in Cork. Midleton, the heart and home of single pot still Irish whiskey, was only distilling for three weeks a year.

The first step toward recovery was setting up a new distillery in 1975, the New Midleton, built to a really superior technical design with the idea that it would be able to produce the different styles of whiskey that had traditionally been produced by the three firms, but in one location.

While the demand for traditional single pot still whiskey remained low, and production was focussed on Jameson (a blend of pot still whiskey and grain whiskey), the distillery did keep producing single pot still whiskey in the background through the 1980s. There was no market for it, but they just had this belief that its day will come.

Jameson's popularity opened the door to the other brands when the time was right. Midleton Very Rare was launched in 1984, and that was a real luxury Irish product. People thought it was mad, they had forgotten that Irish and luxury could be used in the same sentence. But the game changed totally in 1988, when Irish Distillers merged with Pernod Ricard - overnight that provided the one thing that Irish Distillers were missing - a worldwide distribution network.

Since then the market for single pot still Irish whiskey has grown through popular brands like Redbreast, Crafted at Midleton. In August 2021, Redbreast 12 Year Old was awarded the highly coveted World Whiskey Trophy at the International Wine and Spirit Competition.

WAS IRISH WHISKEY FOUR TIMES SUPERIOR TO SCOTCH WHISKY?

I am asked very often by various people if the Aqua Vitae of the past should be spelled whisky or whiskey. I keep referring them to two posts by me online. These are:

Let me first put some facts in historical perspective, starting with the 19th century. We could examine events in Ireland/Scotland both chronologically and in parallel. Ireland was the world’s first maker of pot-distilled spirit, and the world’s largest till 1914. 99% of its whiskeys up to 1860 were blended malt spirits, with the odd rarely seen grain-based spirit.

Scotland Pre 1823: Only 4 large and 7 small legal distilleries existed in Scotland. The licence and tax cost them a pretty penny, hence their products’ exclusivity/steep price and the inexorable rise of illegal distillers. There were at least 14,000 bootleggers at any given time who manufactured Uisce Beatha, pronounced Ooishkebah, which became whiskey /whisky in 1736 (F P Pacult) or 1746 (Charles MacLean). Most were one-night stands, carting their distillery along on two horses, with mature males from that family in tow to avoid the tax men (gaugers). They could create between 20-30 gallons(90-135 litres) overnight. The first and the last two-three gallons were discarded as near poison. Their 80% ABV potion was absolute rotgut, drunk after adding water to dilute the liquor. This stomach-churning product was sold by themselves or the distaff side of their family, grocers and vintners. They were encouraged by the local royalty, who each had a seat in Parliament and kept pushing to legalise distilleries because the illegal distillers/distilleries operated on their tracts of land or property. They took their cut and, as the local Chief Magistrates, turned a blind eye to the goings-on.

Ireland Pre 1823: Official records in Ireland are pure gobbledygook. Irish records were oral rather than written, and details cannot be set store by. The Old Bushmills Distillery, Antrim, N Ireland, is the world’s oldest licensed distillery, dating back to 1608, and is a promising distillery even today. In 1661, a new tax was introduced on whiskey production in Ireland. Almost the entire distilling trade went underground immediately. Landowners were asked to control illegal distilling but did exactly what was to happen in Scotland, i.e. turn a blind eye. Whiskey produced legally was known as "parliament whiskey", while illicit produce was/ is referred to as Poitín, meaning "small pot." Surprisingly, the people’s alcohol of choice till 1785 was Rum! As demand for whiskey increased later, quality dropped. An Act was passed limiting distillers to the use of only malt, grain, potatoes or sugar in producing whiskey, and specifically banning several ingredients. Laws were changed in 1780 to collect tax on theoretical produce based on equipment available rather than actual quantity. As a consequence, small legal distilleries also went underground. In 1779, there were 1,228 registered distilleries in Ireland; by 1790, this number had fallen to 246, and by 1821, there were just 32 licensed distilleries in operation.

Scotland 1823-1863: The first use of Scotch with the sense of specifically relating to whisky occurs in 1855 (Gavin Smith). The term whiskey was more in use in those days. In fact, the Hansard (record of all Parliament discussions) of a year as late as 1896 uses the term whiskey. Whisky or whiskey was by convention, not law: the Royal Commission on Whiskey and Other Potable Spirits (1908/09) spelt both Irish and Scotch with an ‘e’ throughout. 95% of the whiskies produced were blended malt and 5% blended grain (corn, wheat, rye). That said, blending of malt and grain whiskies was banned.

1853: An Act permitting vatting of whiskies when in a bonded warehouse was passed, with a proviso that the bonded warehouse would be no further than one-quarter mile from a town. The number of blended malt whiskies increased five-fold within a month. Andrew Usher, a small-time distiller who had an outreach into the halls of power in London, launched Usher’s Old Vatted Glenlivet – OVG, the first ever commercial vatting to be marketed. The average strength of a vatted malt was 65% ABV and it was best had with soda to cut its strength, though many preferred it straight or with some ice.

1858: Usher informed George Smith (Glenlivet) and grocers John Walker, George Ballantine, William Teacher, the Berry brothers, Arthur Bell and the Chivas Brothers, among others, that their soon-to-be-elected Chancellor of the Exchequer (Finance Minister), William Gladstone would permit blending of malt and grain whiskies in bond by 1860. In exchange, he asked to be made their chief distributor in Edinburgh. These grocers immediately started blending their stocks of malt and grain whiskies in anticipation of the Act. Usher was en route to selling millions of £s of Glenlivet as its sole distributor. (At today’s rates).

1860: The anticipated Spirits Act was passed, but limited to distillers only! Usher was seen as a chalu chapati! Grocers and vintners were cleared by an extension to that Act in 1863. The worldwide journey of Blended Scotch that would set the world afire in the forthcoming years had begun.

1863: Wise grocers had stored their blends in wooden casks. (Some had used metal, and rued their decision, as what came out was exactly what went in!) Suddenly, most grocers had 4-5 Years Old blended whiskies that had matured in wooden casks and their flavour and taste were sublime, compared to the earlier vattings. They were nice and mild (46-53% ABV) to drink and possessed flavours hitherto unsensed. The importance of maturation was finally understood. They would learn more in time that the make of the barrel was an important factor in maturation along with the type of storage and the vicissitudes of the climate. Terms like Angels’ Share and the Devil’s Due would emerge.

Ireland Post 1823: In 1823, the authorities cut the duties by half, and made legal distillation attractive. Reforms led to improvements in fuel efficiency and product quality. Distillers could operate their stills at their pace, with more freedom to tailor their equipment. Duty was to be paid on volumes sold, making storage in bond more attractive. The greatly improved distilling landscape led to a drop in illicit whiskey production and a boom in investment in legal distilleries. In 1821, two years before the reforms, there were 32 licensed distilleries in Ireland. By 1827, this number had risen to 82 reaching its 19th-century peak of 93 by 1835. The scale of the equipment used also increased. Prior to 1823, the largest pot still in Ireland could accept just 750 gallons. By 1825, the Midleton Distillery operated a 31,618-gallon (143,860 litre) pot still, the largest ever built; the largest pot stills in operation in the world as of now are next door in the New Midleton Distillery, at 16,498 gallons (75,000 litres) each.

By 1823, Dublin boasted the five largest licensed distilleries in the world, with a combined output of its 35-odd distilleries of almost 10 million gallons per annum, the largest of which, Roe's Thomas Street Distillery, had an output exceeding 2 million gallons pa. In contrast, no Scottish malt distillery exceeded 100,000 gallons pa. Between 1823 and 1900, whiskey output in Ireland increased fourfold, and with access to the overseas markets provided by the British Empire, Irish whiskey became the most popular spirit in the World. By 1878, Distillers Company Ltd., a Scottish distilling firm, built a distillery in Dublin, and had a demand five times that of Scotch at the time. During this period, the four largest Dublin distilling firms, of John Jameson, William Jameson, John Powers and George Roe (all family-run and known as the "Big Four") dominated the Irish distilling landscape. The chief output of these distilleries, known as a single or "pure pot still" whiskey, was made from a mix of malted and unmalted barley, and solely distilled in pot stills.

The Column Still

Scientists in Europe were trying to invent/develop continuous distillation apparatuses for Cognac and Armagnac. A Scot, Robert Stein, patented a continuous still in 1828 which was the first such still to be employed commercially in Scotland. It had one flaw, requiring the process to be stopped to change filters and clean the apparatus. John Haig, Stein’s cousin, used the apparatus in his set-up at Cameron Bridge which Diageo owns today. That historical grain distillery has been totally revamped.

It was improved upon by an Irishman, Aeneas Coffey. He built and patented the two-column, continuous distillation Coffey still, enhanced versions of which are now in use across the distilling industry. That still could create alcoholic spirit with an ethanol content of 90%+ and soon reached France. Modified versions can achieve an ethanol content of ~95%.

Even today, the time taken from freshly cut barley deposited in a malt distillery till it is casked as New Make is anywhere from 90-100 days. The number of processes involved is mind-boggling. Moreover, with the Scots being as parsimonious as they are reputed to be, the reject from every stage is routed back to its previous stage and comes back again and again. The apparatus is shut down in sections after completing a batch and cleaned. The next batch starts the long journey some 15 days later. The distillate that goes into the barrel is called new make and may only be called whisky when that barrel is finally opened after a minimum of three years. Common sense prevailed in the 1990s, where distilleries were established to complete the initial stages of preparation up to the drying of the malting at the desired phenol level, i.e. passing them over a fire for a computed period of time using a calculated amount of peat as fuel. Now, single malt distilleries reach the new make stage in about 50-55 days.

The column or patent still works non-stop and produces the new make from one batch of grain every single day. These distilleries produce single and blended grain whisky as required, selling surplus neutral ethanol to other industries. The ingredients of a single/blended malt/blended Scotch are now available. The Irish did not see things in this light starting 1860. They openly deprecated grain whisky and deemed it unfit for consumption. Irish grain distilleries sold their output to the Scots for blending and to the British for making Gin. They did produce excellent whisky, because they triple-distilled their spirit and collected a very balanced cut i.e. the portion of the entire distillate that is extracted and diverted to the next stage of creating a new make. Usually, this is between the 40-70% segment of the downwash and called the heart. The first portion is called the head, of which the initial 10% is discarded and the last section is called the tail, of which the final 10% is discarded. The head and tail of the distillate that is retained is cycled back to the previous stage.

At their peak, the ~32 distilleries in Ireland would grow to become the largest in the world, with a combined output of almost 12 million gallons per annum that sold readily in the market. On the other hand, the combined output of the ~70 distilleries in Scotland was less than three million gallons pa., but rising as more and more distilleries were sprouting in Speyside and Campbeltown.

Legal Disputes: In 1878, Irish distillers, led by their big four, filed a petition in London claiming that spirit made from grains be given a totally new name, as they were an insult to whiskey. It took almost thirty years to decide the case, which went against the Irish, as more and more parliamentarians in London had interests in distilleries in Scotland. In a strange counter, the Irish filed another suit demanding that the desecrated spirit ex-Scotland be named whiskey, and Irish triple pot distilled spirit be called whisky, indicating purity and superior quality.

A Royal Commission was set up to investigate the matter and in 1909, ruled against the Irish. The outcome of the petition was typically British-ambivalent. The Rule said that the spirit under question could be called by either of the two choices, irrespective of the country of origin. The Irish chose whiskey, whereas the Scots chose whisky. Sadly, distilleries in Ireland were affected by WW I (1914-18); their war of independence from the British and their own civil war (1919-21) which also led to the migration of locals to the USA (where they called their spirit whiskey); prohibition in the USA, their second largest market (1920-33); widespread counterfeiting of Irish whiskeys in America and Britain; British trade restrictions (sanctions) that cut off the Colonial market and WWII. A glorious chapter of the whisky industry had to be closed, to next resurface in the following millennium.

FOUR NEW DISTILLERIES COMING UP - OOPS MAKE THAT FIVE

With each year, the number of distilleries in Scotland keeps increasing, pushing up the demand for not just single malt Scotch whiskies created in the classic mould, but also young Scotch whiskies created in a non-conformal mode. These distilleries deliver the essential requirements using advanced concepts, people-fuelled ideas and crowd-sourced funds. This is the third post on new distilleries and I recommend that you read the first two that are posted as disparate and complete articles.  WOLFCRAIG DISTILLERY

Wolfcraig will be a world-class, succinctly 21st-century distillery built on rich expertise. It will blend tradition and modern innovation to create the perfect malt. The Legend

Legend has it that Norse invaders looked set to attack a small garrison of Celts who had settled on the banks of the wild Forth River. As they crept through the cover of night, one stumbling Norseman trod on the paw of a wolf-cub who, startled from slumber, howled for his mother who in turn sounded the alarm for her mate.

The howls of the pack wakened the sleeping garrison who called their men to battle and fought to save their position on the rock. The Vikings fled both the men and the beasts, and in honour of their glorious and unexpected victory, Wolfcraig takes its name from the courageous heart of a wolf cub. The inspiration that runs through the very foundations of this Distillery today.

Moving forward again in the chapters of our nation’s rich history, Modern Scotland itself was born on the banks of the Forth through the storm and steel of patriotic figureheads such as Robert the Bruce. The distillery

UPDATE

In Stirling, the team behind Wolfcraig Distillery has announced that the facility will now be constructed at the Craigforth Campus in the city. The £15m distillery and visitor centre was due to be built on the outskirts of the city but plans were changed since the new location has better links to public transport and is much closer to the heart of Stirling, making it easier for visitors and tourists to access the distillery. Craigforth Campus is on the site of the former Prudential headquarters and is being redeveloped by property firm Ambassador Group.

St Boswells Distillery

100% Scottish Spirit: First and only grain whisky distillery in the Scottish Borders.

ARCHITECURAL RENDERING OF THE DISTILLERY

Jackson Distillers has submitted plans for a £45 million distillery in the Scottish Borders named Boswells Distillery, which will produce grain whisky for the blending industry and grain neutral spirit for gin and vodka production.

The distillery, born out of Charlesfield Farm in the Scottish Borders, will be the first, and only Scottish Borders based producer of single grain whisky spirit and grain neutral spirit using 100% Scottish water and cereals of proven traceable origin. The company – which includes former Glenmorangie and Diageo executives – claims the state-of-the-art facility will be the lowest carbon and most resource-efficient grain distillery in Scotland, capable of producing 20 million litres of pure alcohol a year.

As an independent, the distillery’s No.1 priority is to supply grain spirit to independent distilleries, to relieve doubt about supply. The primary product from the distillery will be a quality Scotch Grain Whisky perfect for use in Premium Blended Scotch Whiskies. The spirit will be produced using fully traceable Scottish grown barley and wheat.

A small volume of new make spirit will be laid down in a variety of high quality casks to produce a range of Single Grain brands. The distillery will also produce a premium low methanol Grain Neutral Spirit (GNS) for use in all white spirit drinks. The GNS will also only use fully traceable Scottish cereals, ideal for the growing Scottish Gin market.

The distillery is designed to have the capability to run campaigns of a variety of Scottish cereals.  This will enable them to offer spirit produced from rye, oats or other grains. They will also be certified to produce organic and kosher spirits.  As an independent, they can be flexible to produce what customers demand. The distillery will produce two by-products: distillers syrup and draff, both ideal for use as feedstock for anaerobic digestion and as animal feed.

Charlesfield Industrial Estate in the heart of the Scottish Borders is the ideal location. The new distillery will be sited on land at Charlesfield, St Boswells, near Melrose. It will create new jobs and utilise their own renewable energy. The proximity to the production areas of wheat and barley shortens the distance of travel for the raw materials, keeping haulage and carbon costs down, and the easy access to the trunk road network to the north and south allows the spirit access to markets not just in Scotland but in the rest of the UK.

The availability of space to create warehousing will allow cost effective maturation of the spirit on site for our own spirit and also allows customers to purchase product for storage and maturation at JDL.

The venture brings significant benefits to the local Scottish Borders economy by using local suppliers for grain, providing new employment opportunities, and it will do so with minimal impact on the environment through recycling production by-products such as spent lees (to be used in the adjacent AD plant, and for use as cattle feed to local farmers), and where possible recycling water used in the distillation process. The main supply of water for the distillery will come from a spring that will be bored on land which will form part of the distillery ground, with the bore hole perfectly situated under the mash house.

To ensure the distillery produces consistent high-quality spirits, they will make sure all processes from cereal purchasing to distillation follow a number of standards and controls. All cereals will be only purchased from farms which are members of the Scottish Quality Cereals Association. This will ensure fully traceability on key ingredients.

Plans for the site – at Charlesfield Industrial Estate in Melrose – are under consideration by Scottish Borders Council.

Moffat Distillery

EARLY DAYS

In 2006 Thai company Pacific Spirits, part of the Great Oriole Group, soon to be known as Thaibev, acquired Inver House Distillers, a US drinks company that had built the Moffat Distilleries complex three miles from Airdrie. These distilleries were shuttered by 1986. Only Inver House office complexes remain.

Dark Sky Spirits was granted planning permission on 27 Jan 2020 to build its whisky distillery in the Scottish town of Moffat. There is no connection with Thaibev. At the Moffat site, Dark Sky Spirits plans to construct a distillery and visitor centre, which is expected to entice up to 9,000 visitors in its first year. Moffat distillery will also house a retail unit and tasting rooms and will offer parking for 22 vehicles.

Dark Sky received £320,000 (US$415,000) in funding to build the facility. The investment will be used to construct the distillery and a bonded warehouse, which will help reduce bottling and transportation costs, and begin blending. Construction on the site will start later, given the pandemic and distillation will follow. The proposed site, off Old Carlisle Road in Moffat, will allow Dark Sky Spirits to produce 60,000 litres of pure alcohol in its first year.

The new distillery, nestled in the hills of Moffat, is thought to be the first legal distillery to operate in Moffat. The product is named after Moffat’s status as Europe’s first dark sky town, a title awarded to Moffat due to the installation of eco-friendly street lighting that keeps light pollution to a minimum. The construction of the new site will allow the business to produce its first single malt. Dark Sky has been making The Moffat blended malt whisky off-site since 2018.

Distillation is expected to begin in early 2022, and the single malt will be matured for seven years before it is tasted. The name of the inaugural whisky is yet to be revealed. In the meantime, the distillery will continue to blend whisky, and develop other spirits and liqueurs. It will also offer new expressions under its Local Dram brand, including Doonhamer and Muckletoon, as well as whiskies from every corner of the country.  

This year, Dark Sky Spirits has broken ground on the Moffat Distillery. The new distillery, due to begin production 2022, will allow the company to add its own single malt to its portfolio, as well as offering tours and tastings to whisky fans.

The distillery will operate what it claims is Scotland’s only direct wood-fired still, which will offer a signature flavour for the whisky and create a sustainable production process, according to the founders.  Furthermore, Dark Sky Spirits plans to create a ‘makers marketplace’ on its site, a dedicated creative space for local producers to work together and share ideas. The Dark Sky Spirits team hope to offer ‘hard hat’ tours in late 2022, ahead of the public launch. Once open, the new site will offer tours, tastings, workshops and a whisky bar.

Midhope Castle Distillery

Midhope Castle is a 16th-century tower house in Scotland. It is situated in the hamlet of Abercorn on the Hopetoun estate, About 4 kilometres (2.5 mi) to the west of South Queensferry, on the outskirts of Edinburgh. Midhope Castle is featured as a location in the Outlander TV series on Starz as the main character Jamie Fraser’s family home called Lallybroch but also known as Broch Tuarach.

Former Diageo director Ken Robertson and the owners of high-end whisky bottler Golden Decanters are behind plans to build a malt distillery on Hopetoun Estate near Queensferry. Robertson is listed as a director of Midhope Castle Distillery Company along with Julia Hall Mackenzie-Gilanders and Ann Medlock. The planning application submitted by 56three Architects for a new malt distillery on the historic Hopetoun Estate at Midhope, West Lothian, on behalf of Golden Decanters, has been approved. 56three worked very closely with Rankin Fraser Landscape Architects to ensure that the new building will sit sensitively within the existing landscape setting.

Fans of Outlander flock to the site in their thousands, but can only currently visit the grounds to take pictures of the castle. Once the development is complete, these visitors will be able to access the repaired parts of the castle, which are set to be revamped to include tasting, meeting and dining rooms. Initial work is expected to be completed in 2022 with further renovation and repairs to the castle (including accommodation) to take place once the business is established. Midhope Castle grounds will be home to a new whisky distillery. As well as building a distillery, the plans include details on restoring the castle, which is currently an empty shell, to eventually include visitor accommodation. The plans, which were approved on 13 April, show the site will include a 2850sqm distillery building, service buildings, landscaping, an access road and parking.

The Midhope Castle Distillery Company said the contemporary distillery is to be positioned within a carefully designed landscape drawing inspiration from historic features. Immediately adjacent to the distillery site is Midhope Castle, a 16th century tower house which is presently an empty shell. It is intended that the distillery development will lead to a longer-term project involving the significant restoration and return to use of Midhope Castle and its immediate grounds. Hopetoun Estate has a long tradition of growing and supplying malting barley for the Scotch Whisky industry and the new distillery would use exclusively estate-grown barley. It would also reflect the estate’s commitment to environmental sustainability.

FIRST DISTILLERY ON ISLE OF HARRIS

Islands Single Malt Scotch Whisky

This community-focussed project led by an Anglo-American musicologist is the first commercial distillery to be built on the island of Harris.

The ‘social distillery’ is a true island distillery, run by the local community for the local community. All the cows on Harris are fed for free on the distillery’s draff; work experience placements are offered to school children during the summer; local artists’ work feature within its walls and the visitor centre plays home to book readings.

The only style of whisky fit for a distillery like this is a complex island malt, lightly peated with additional layers of flavour from a cloudy wort and long fermentations. Of course maturation takes place completely on the island, predominantly in ex-Bourbon casks with some oloroso Sherry butts.

The single malt will be bottled as The Hearach (a Harris islander), which won’t be ready for some time, but expect it to be full-bodied, fruity and with a touch of that salty, windswept Hebridean character island malts are famous for.

The first cask with 516 bottles is slated for opening late 2023, with a steady stream of bottling throughout the year. The whisky is expected to be 46 per cent ABV with an opening price of ~65£.

THE DUNDAS DISTILLERIES AS SEEN BY CHARLES BARNARD

 Port Dundas Distillery


The former Lowland Whisky distillery Port Dundas was in the centre of Glasgow on the Forth-Clyde Canal, framed by various parks. It was a landmark, even though not many people actually knew what it was. It was built in 1811 at the highest point in the city next to the banks of the Forth & Clyde Canal. Another distillery, Cowlairs, started operation soon after and in 1860 the two sites – by then both with Coffey stills installed – merged. In 1877, Port Dundas was one of the founding members of the grain distillers’ conglomerate DCL.

With its good transport links and prime location in the city, which had become the blending powerhouse of Scotland, Port Dundas grew in size to become the largest distillery in Scotland. By 1885, its three Coffey and five pot stills were producing over two million gallons a year and, in an approach we’d today label as innovative, was using ‘American corn’, barley, and rye.

Its neighbour, Dundashill (which itself would be absorbed within the complex in 1902), was at that time the largest pot still distillery in the world, its two wash stills and 10 spirit stills making both double- and triple-distilled malt, peated and unpeated. There was a cooperage, housed in the former Dundashill building, and a piggery – the swine being fed on draff.  The whole site was topped by a 138-metre brick chimney, for a time the highest in the world.

Two fires at the start of the 20th century didn’t stop it for long, though by the 1970s it was in need of modernisation. At that point, production increased once more and a dark grains plant was installed.

In 2010 however its owner Diageo decided to concentrate its grain production at the vastly expanded Cameronbridge. Although there were offers from rival distillers to buy Port Dundas they foundered – possibly because of the potential cost of another upgrade. In 2011, production ceased and the site was demolished. The landmark had gone.

Production

Port Dundas is considered a full-bodied, characterful and heavy grain whisky that become a little lighter in the final few years of the distillery. As a classic Diageo distillery, it has always contributed significantly to their numerous blends. Haig, White Horse and Johnnie Walker, among others, were supplied with their grain whisky.

The three Coffey stills once produced an impressive 39 million litres of whisky per year. Today the equipment is dismantled and the buildings are torn down. Original bottlings by the owner are extremely rare, but every now and then one or the other worthwhile bottling from one of the numerous independent bottlers appears.

History

Port Dundas was founded in 1817 as a malt distillery, but a short time later it was converted into a grain still and equipped with Coffey stills. The inventor of the still, Aeneas Coffey, is said to be responsible for this. The pioneer of this distillation variant presented it there personally.

From 1860 the distillery cooperated with the Cowlairs distillery and from 1877 Port Dundas was one of the founding members of the Distillers Company Limited (DCL) and developed into the largest distillery in Scotland at the time. In 2010, the owner Diageo decided to close the distillery and relocate production to the Cameronbridge distillery.

THE DISTILLERY AS OBSERVED BY ALFRED BARNARD

Having long been possessed with an ardent desire to see the Distilleries of Scotland and Ireland, I took the first opportunity that presented itself, and, knowing the task set before me would occupy at least two years, made arrangements to transfer my duties to others. It was at first thought desirable that my tour should commence at the Orkneys; but, the weather proving unfavourable, my plan of entering the land of Whisky by the sea was abandoned in favour of the iron road to Glasgow. We - for I was not doomed to travel alone - started from Euston by the night mail, having previously invested in a copy of “Morewood” and one or two other books on Distillation to study on our journey. Nothing of note occurred on the journey, except that we got a little amusement out of our fellow travellers - one of them a gentleman in clerical attire, catching some fragments of our conversation on spirits, evidently mistook us for important officers in the Salvation Army. Seeing this we puzzled him, and in answer to his enquiries, informed him that we had just started on a long and tedious pilgrimage to the spirit land, and that ours was a mission of investigation into the creation, development and perfection of crude spirits into “spirits made perfect.” One of our party here produced his flask and explained to our reverend friend what kind of missionaries we were, when, to our surprise, after taking a “wee drappie,” and like Oliver Twist, asking for more, the pious looking brother offered to join us in our excursions, that he might do the tasting, and we the writing. This generous offer we declined.

Arriving at Glasgow we drove to the Victoria Hotel, where the cheery landlord, Angus Mackay, a stalwart young “Hielander,” gave us a hearty welcome. After a substantial breakfast we engaged a good horse and trap, and soon found ourselves trottlng along Buchanan Street, up several steep hills, until we finally arrived at our destination. Port Dundas, from whence the Distillery takes its name, was so called in honour of Thomas, Lord Dundas. It is the basin of the celebrated Forth and Clyde Canal, and is situated, strange to say, at the top of a hill over-looking the city. The appearance of ships’ masts in such a position, over-topping the houses, presented to us a peculiar surprise. The canal, which is a direct water-way from the Clyde to the Forth, a distance of some thirty seven miles, over the whole of its progress through bustling towns and quiet villages, commands fine views of the country, pretty water scenes, and the magnificent background of the Forth. Port Dundas itself, however, is the scene of great commercial activity, and the prominent feature of the locality is the Distillery. Established more than a century ago, Port Dundas has, by the energy and enterprise displayed by its founder, Robert Macfarlane, and latterly by his son Daniel, been so developed that it has become one of the largest Distilleries in the world; and although amalgamated with the Distillers’ Company, Limited, Richard Macfarlane, son of the Daniel before mentioned, is now Managing Director for the Company at this Distillery. The works, over nine acres of ground, are situated on a steep hill near and overlooking the city of Glasgow and 

surrounding districts, and are close to the railway and canal. Having previously communicated by telephone with Mr. W. Bruce, the operative manager, we found that gentleman waiting to receive us. Under his guidance we commenced our inspection at the Barns or Granaries, situated at the north end of the Distillery on the higher slopes of the hill. They consist of buildings, four stories high, and some idea of their magnitude may be formed by the following facts. Number One at the time of our visit contained 10,000 quarters of American corn, and Number Two, 14,000 quarters of barley and rye, and then they were not even full; at times they have stored as many as 45,000 quarters. The grain is imported by rail, canal, and carts, direct into the works, where it is emptied into hoppers, and taken by elevators and screws to any part of the buildings at will. We next entered the two malting floors, which are situated at the west end of the Granaries, and were amazed at their dimensions; they are quite the size of feeding parks, and a volunteer regiment could drill in them with ease. The cisterns connected with these buildings each wet 2,400 bushels at one time. South of the Granaries, standing all in a line, are the seven Kilns, which are of great dimensions, one of them drying 2,000 quarters of grain at a time. Five of them are used for grain, the other two for malt, and all are heated by hot air. The dried malt and grain is then passed through screws to the malt and grain Store-rooms, five in number, each capable of holding 14,000 bushels of malt, and used altemately. The grain and malt passes from these rooms into the Mill, which building has the appearance of having been hewn out of a rock, nothing being seen but solid masonry and iron girders, while it is covered by a large water tank communicating with all parts of the works where fire might originate, and capable of flooding the whole place in a few minutes. In the Mill there are eight pairs of large mill-stones, working night and day, driven by a powerful engine, upwards of 150 horse power. Emerging from the clouds of dust we found ourselves in the court-yard, where the scene was indeed striking. The engine department was before us, which is quite an important division in this mammoth establishment, as besides the ponderous engine which drives the Mill there are sixteen others ranging from 1 to 160 horse power, or a total of about 300 indicated horse power. In the Boiler-house there are ten of Galloway’s Patent Steel Boilers, 30 feet long by 8 feet in diameter, worked at 60 lbs. pressure; eight of them are placed in a row, and two near the Warehouses. These patent boilers are capable of evaporating 7,000 lbs. of water per hour, with average coal and draught which will drive 395 indicated horse with an engine consuming 20 lbs. of water per horse power per hour. The shell plates of these boilers are 7/16 of an inch thick and other parts in proportion, and are composed of steel plates capable of withstanding a tensile strain of 26 to 30 tons per square inch wlth not less than 20 per cent. elongation in 10 inches. The grist, or ground grain, is conveyed from the Mill to the large grist-pits by screws, and thence not (as is usual in smaller distilleries) in bags or barrows, but in cart loads of from 26 to 30 cwts. The house in which the four pulping tuns are placed is on the west side of the grist pits, near the Mash-tun, and is three stories high. The tuns are all wooden vessels, closely hooped and covered in. Having passed over weighing machines, the grist reaches the elevators, which raise it into patent Mashing Machines, through which it passes into four Pulping Tuns, and thence into two Mash Tuns of enormous size, measuring 30 feet in diameter and 9 feet 6 inches in depth. After the fine worts are drained off, the grains are pumped into a large Draff Tun, and when properly exhausted the draff is dropped through into carts, which come from various parts of the neighbourhood. For feeding cattle, and more especially dairy cows, the draff from this wort is unsurpassed.


The fine worts drained from the mash are collected in two large Underbacks, placed at the root of the Mash-tuns, and holding about 14,000 gallons. From thence they are pumped into the Wort Receivers. In the adjoining house here are seven of Miller & Co.’s Patent Refrigerators, over which the wash flows into the Fermenting Backs. At the north end of the Mash House is the Tun Room, an extensive, lofty, and spacious apartment, which runs along and forms a greater part of Vulcan Street. It contains thirty-five Washbacks, some of them holding as much as 53,000 gallons apiece, from which the fermented liquor runs into the Wash and Intermediate Chargers, which together hold 270,000 gallons, and are situated in the vicinity of the Still Houses. The wash is afterwards pumped to the Stills by pumps of great size and power, driven by steam.

At this period of our inspection we paused for a short rest and slight refreshment; and resuming our tour at the Still House, a lofty structure forming the main body of the building, we were shown the three Coffey’s Patent Stills. These handsome town-like vessels are 70 feet high; and after a full inspection, we passed on to No. 2 Still House, where are five Pot Stills, one of them having a capacity of 24,000 gallons, and said to be the largest in the kingdom. Here also are the pumps for water, wash, hot-feints and wash-heater pumps, some of them are three-throw, others centrifugal, some of these latter are huge machines of immense power and capable of throwing from 400 to 600 gallons per minute to a height of 40 feet. From the Still Houses we passed into the Receiver Room, which also contains the Safes and Sampling Safes. In front of the Patent Still House there is a Worm Tub, 30 feet long, 10 feet wide, and 6 feet deep, also for the Pot Stills as many as four Worm Tubs, each 40 feet long, 10 feet wide, and 6 feet deep, all constructed with metal, and filled with huge copper coils and pipes.

There are nine large Low-wines and Feints Receivers, and three Spirit Receivers, all great size, the latter being connected with the Spirit Store, to which the spirits run by gravitation, and are received into the Vats and casked in the usual way. During our progress through the Distillery we were delighted with the order, everywhere remarkable. All the work is accomplished with almost military precision, and the workmen attend to their duties in a quiet, methodical manner. The Still Houses and Receiver Rooms are models of brightness, the pipes and vessels being painted blue, red, white, or black, according to their contents; by those who are acquainted with the operations and process of distilling grain Whisky, this department is much admired. The next object which attracted our attention was the Spirit Store, a large building conveniently situated for Stills, Receiver House, and Warehouses, containing three Vats of great capacity, holding respectively 7,387, 6,859, and 5,550 gallons. About fifty feet distant is the fine range of Warehouses, facing the canal.

They are immense buildings of from four to six stories high, forming part of the boundary of the works, and having 50,000 square yards of floorage. Here were stored over 16,660 casks of Whisky of various sizes and ages, containing 1,504,000 gallons of spirits. We next proceeded to the Cooperage, situated higher up the hill, which is quite a work in itself. The casks are stored here in thousands, and put in order before being conveyed to the Spirit Store. To the north of this we stepped into an open space of ground in which is a piggery accommodating over four hundred pigs fed on the distillery refuse. Some of them are highly bred animals of great size, and on entering one of the breeding sheds the visitor is surprised to see the wall literally covered with prize-cards. Employed upon the premises are 250 men, and the collection of the Inland Revenue necessitates a staff of 21 officers, including two supervisors. On the left hand side of the main entrance are the handsome and extensive offices for the Directors, Managers, and clerks. The operative Manager’s office is in the centre of the works, with sampling rooms, &c., and is in telephonic communication with the offices and principal departments all over the Distillery. We may mention that this Distillery pays in duties annually about £430,000.

The arrangements for extinguishing fire are on a very extensive scale in this Distillery, and consist of fire-plugs and hose distributed all over the premises.

The water used is taken from Loch Katrine and the Canal, each being made subservient to its special work in driving and distilling.

The annual output of this Distillery is no less than 2,562,000 gallons.
